I read through the LRB and it seems to say that I may only have one Nurgle Beast on my team but I wanted to verify it because of some point (I'm having a hard time finding it) seemed to hint that Nurgle Teams may have two?

There are variant rules/leagues that sort-of have a Nurgle Stunty team. Nurglings are allowed 2 Beasts of Nurgle.
But alas...these are not official teams...and therefore I am prevented at experiencing further frustration/humiliation at tournies.

*giggles* I wish I could have two but alas I am prevented from kickin' your butt during the 2006 tourney year with two... so I shall have to do it with just one lol. Of course I am very low on that wonderful list of competitors so may be no threat at all.
